OUR BUSINESS STARTED OFF AS A “FARM-TO-FORK” PROJECT, BORN FROM LOVE OF THE ST DAVIDS PENINSULA. WE CELEBRATE THE LOCAL PEOPLE, HERITAGE, ENVIRONMENT AND INGREDIENTS FOUND HERE.
IN 2016 - AFTER 25 YEARS AWAY - FOUNDER NEIL WALSH RETURNED HOME TO ST DAVIDS, PEMBROKESHIRE, WHERE HIS FAMILY HAVE LIVED FOR AT LEAST 8 GENERATIONS. HIS GOAL WAS TO CREATE A PREMIUM HOSPITALITY EXPERIENCE THAT SHOWCASED EVERYTHING UNIQUE ABOUT THE ST DAVIDS PENINSULA.
IN THE RESTAURANT, HE SOURCED EVERYTHING LOCALLY WHEREVER POSSIBLE. BUT, DESPITE HIS BEST EFFORTS, NEIL WAS UNABLE TO SOURCE A LOCAL, PREMIUM GIN TO SERVE. SO HE SET HIS MIND ON CREATING EXCEPTIONAL SPIRITS TO SERVE IN THE RESTAURANT, WITH THE FIRST BEING OUR ST DAVIDS SEAWEED GIN AND RAMSEY ISLAND SPECIAL EDITION.
NOW, 6 YEARS LATER, AWARD-WINNING MASTER DISTILLER JAMIE BAXTER HAS HELPED DEVELOP A FULL RANGE OF SMALL BATCH, HANDCRAFTED, ULTRA-PREMIUM SPIRITS. PRODUCED IN OUR 185L COPPER POT STILL (CALLED ADA, AFTER NEIL’S GRANDMOTHER), OVERLOOKING THE ICONIC ST DAVIDS CATHEDRAL, EACH OF THEM BRINGS A UNIQUE FLAVOUR OF THE PENINSULA TO LIFE.
EVERY BOTTLE SOLD CONTRIBUTES BACK TO THE LOCAL AREA & WIDER WALES, THANKS TO OUR PARTNERSHIPS, SUCH AS, THE RSPB & PROSTATE CYMRU. WE ALSO SUPPORT NUMEROUS HYPER-LOCAL CHARITIES HOLDING SPECIFIC EVENTS TO HELP RAISE FUNDS.
